Cachopo is the largest municipality with 197.56Km2, located north of the city of Tavira. It is a very traditional village, with around 1000 permanent inhabitants, which still remains very attached to its origins and the tourist resources are not around the corner. The town has a strong mountain identity that is expressed in the various traditions and annual festivities such as weaving and basketry, wooden crafts, gastronomy, knitted clothes and woven blankets decorated with embroidery inspired by wild flowers found in the fields. Probably one of the most important traditions of Cachopo - besides the production of honey, wool and cheese - is the production of cork which is extracted from the cork oak tree. Cork oaks are harvested every nine years, once they reach maturity. Over time, the tree forms a thick cork bark which can grow to considerable thickness. During a harvest, the outer bark of the cork oak trunk and main branches is carefully stripped by hand no mechanical stripping device is allowed. Harvesting cork does not harm the tree, and a new layer of cork bark decreases, making it a renewable resource.
